Start by grating and chopping your carrots, onions and mushrooms. I find that the carrot works better if it is finely grated, however it still works with a standard grated |

Spray some frylight in to your cooking pan and allow to heat. Once this has got good and hot, just throw in your mushrooms and onions and fry them off. |

Next you need to throw in your grated carrot. I actually fry this off for a couple of minutes before adding my chopped tomatoes and other ingredients. |

You then can add the rest of your ingredients to the pan. I give it a really good few glugs of Lea and Perrins. It’s one of my fave ingredients for giving loads of foods a really tasty flavour and it’s syn free! Add the garlic and oregano to your tastes. I’m a garlic freak, so the more the merrier for me! |

Give the lot a bloomin good stir and allow to simmer for a bout 15mins (perfect for while your pasta or spaghetti is cooking) Make sure you give it a good stir from time to time. Hope you enjoy XOXO |
